Pecan Pie Cookies with Spiced Pecans

If you love pecan pie but want something a little easier to grab and share, these Pecan Pie Cookies give you the best parts of both. The cookie itself is soft and buttery with pieces of homemade spiced pecans mixed throughout, then each cookie is filled with a warm, gooey pecan pie filling.

What really makes these cookies different is the pecans. Before they ever make it into the cookie or filling, they’re toasted and coated with brown sugar, cinnamon, cumin, cayenne, butter, and vanilla. The result is sweet, warm, slightly spicy, and a lot more interesting than using plain pecans.

These can be made as large or as small as you like. I usually bake about 12 cookies per baking sheet, but the final yield will depend on how big you make them.

What Makes These Pecan Pie Cookies Different

These cookies are built in three layers: homemade spiced pecans, a soft buttery cookie filled with chopped pecans, and a warm pecan pie filling spooned into the center after baking. The spiced pecans are what really set them apart, adding cinnamon, brown sugar, a little cumin, and just enough cayenne to balance the sweetness.

  1. Spiced pecans – toasted and coated with brown sugar, warm spices, butter, and vanilla.
  2. Soft pecan cookies – buttery cookies with pieces of the spiced pecans mixed into the dough.
  3. Pecan pie filling – a gooey brown sugar and pecan filling added after the cookies cool.

Make the Spiced Pecans

Start by mixing the kosher salt, cumin, cayenne, cinnamon, and brown sugar together. Toast the pecans in a skillet over medium heat for 5–6 minutes, then add the butter and toss until the pecans are coated. Reduce the heat, add the brown sugar mixture and vanilla, and continue stirring until the sugar has dissolved and coated the pecans. Spread them onto parchment paper and let them cool completely before chopping.

Make the Cookie Dough

Cream the softened butter and brown sugar together, then mix in the canola oil, egg, and vanilla. In a separate bowl, combine the flour, powdered sugar, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients, then fold in chopped spiced pecans. Shape the cookies however large or small you like and press a deep well into the center of each one. Bake at 350°F for about 9–10 minutes, adjusting the time for the size of the cookies.

Make the Pecan Pie Filling

Combine the brown sugar, salted butter, corn syrup, salt, vanilla, and chopped spiced pecans in a medium saucepan. Stir continuously over medium heat until the mixture just begins to boil, then remove it from the heat. Let the baked cookies cool, press the centers down again if needed, and spoon the still-warm filling into each center before the filling fully sets.

Assemble the Cookies

Let the baked cookies cool, pressing the center well down again if needed. While the pecan pie filling is still warm and before it fully sets, spoon it into the center of each cookie, filling the entire well. Allow the filling to cool and set before serving.

Tips for the Best Pecan Pie Cookies

  • Don’t overbake the cookies. About 9–10 minutes is usually enough, depending on how large you make them. You want the cookie base to stay soft.
  • Make a deep center well. Press the center before baking, then press it down again after baking if it puffs back up.
  • Watch the pecans closely while toasting. They only need about 5–6 minutes over medium heat before the butter and spices are added.
  • Remove the filling as soon as it starts to boil. It will continue to thicken as it cools.
  • Fill the cookies while the filling is still warm. Let the cookies cool first, then spoon the warm filling into the center before it fully sets.
  • Make them whatever size you like. You normally fit about 12 on a baking sheet, but the recipe can be made larger or smaller.
